Cleaning the machinery is an important factor in maintaining the equipment to prepare non-alcoholic beverages. By constantly cleaning the machinery correctly, it will ensure longer lasting and more effective use of machinery to make a hygienic and well-prepared beverage. The maintenance of the equipment is extremely important to use the machinery to the best of its ability, which requires the machinery, equipment and utensils to be cleaned thoroughly and stored safely to ensure they are not damaged, accumulate a build up of debris and come permanently damaged or dirty/stained.
All utensils such as spoons, plates, glassware, knifes, chopping boards, tea pots, beverage jugs, bowls, other equipment (lemon squeezer) and cleaning products such as towels, buckets are cleaned daily, as mentioned within the cleaning schedule on the following page, and are quite simple and easy to wash. Place all utensils within an industrial dishwater to be cleaned (ensuring they fit), a few at a time, as it is washed at a temperature of 65 degrees, killing all bacterial growth. Allow them to be air dried and then store back into place carefully and neatly to ensure no breakages or cracks.

The grey basket holds the dirty utensils and other items, and there never can be an overload or too many objects within one wash. Place items spread apart and not close together to ensure that all items are washed thoroughly. The square metal sliding barrier is to be placed down to begin washing and pulled back up, once finished washing, to unload onto drying rack.
How to clean a blender;
A blender is used with Openshores to blend fruits and other ingredients for smoothies, frappes, children's beverages and health beverages
1. Ensure that the blender jug is sitting in the base properly before proceeding
2. Add 1-2 cups of warm water
3. Add one to two drops of dish-washing liquid
4. Press the low blend button and allow to blend for up to 30 seconds.
5. Pour the liquid down the sink.
6. Rinse under the faucet. Put in sanitizing solution for 30 seconds.
7. Place upside down on a dish drying rack to air dry for fastest result or rest back on base and allow to air dry

A juicer within Openshores is used to squeeze juice for the freshly squeezed juice and also to create lemon juice and lime juice to add to beverages such as health drinks and children's drinks.

2. Clean out excess pulp and rinse each piece under running hot water
3. Soak each piece for a few minutes and then wash with a brush or soft cloth.
4. Pay attention to mesh strainer, it accumulates pulp easily (Do not allow the pulp to dry in screen as it is difficult to remove).
5. Use lint-free cloth moistened with water and wipe the machine itself.
6. Allow them to air dry on a towel or the drying rack.

This piece of equipment is used to create the milkshakes and is quite simple in maintaining clean and hygienic.
1. Rinse wand of machine and scrub all moving parts
2. Wipe the machine with warm water and soap-free detergent

STORAGE
Store all equipment in cupboards, or away from the edge of benches to avoid slipping or breakages. Ensure the powerpoint is not near water and electrical cord is away from water, not dangling or creating hazards within the kitchen. When not in use, turn powerpoint off at wall and place all machinery in underneath cupboards of benches
